Priddy Oggies


I am interested in a game called RummiKub. My friends and I played at the day one of 2016. I searched the wiki that it is a combination of Rummy and Mahjong. I have no idea what is Rummy. But, Mahjong?! Of course, I know how to play Mahjong as a Taiwanese girl. So, I definitely enjoy this game. And I think it is more complicated than Mahjong. For Mahjong, you need to focus on what you have and find a way to get sets. For RummiKub, you focus on not only what you have, but also what are played. Then, you can manipulate players’ cards and try to get rid of you have on hand. RummiKub has sold online, but you can actually use 2 sets of playing cards to play. So, google the rules on-line and try it.

Oven Temperature Setting:
Bake at 200C/400F/Gas Mark 6 for the first 20 minutes.
Then, lower the temperature to 160C/325F/Gas Mark 3 for the next 30 minutes.
Recipe: Serve 5 people


 
Steps of Priddy Oggies

(1) Make the pastry firstly. Mix the salt and flour in a bowl. Then, place the diced better in the bowl. Rub butter into the flour with fingertips until it is breadcrumbs like.


(2) Stir grated cheese with breadcrumbs. Add water into the bowl to make it into a firm dough. Set aside around 30 minutes.


(3) Prepare the filling. Add chopped apple and sliced mushroom into a big bowl.
(4) Cut the pork and bacon into a roughly 0.5 cm pieces. Add into the bowl with grated cheese and chopped basil. Mix them well. Season with some salt.


(5) Divide pastry into 5 balls. Take one ball. Roll it into a 24 cm diameter circle. Place the filling in the center of the pastry.
 
 

(6) Place it on the baking tray. Bring both sides of pastry up to press it together. Brush with beaten egg over the top of pastry. Use a chopstick to poke some holes over the top of pastry.


(7) Repeat step (5) and (6) for the rest of 4 pasties. Then, send it to the pre-heat oven at 200C/400F/Gas Mark 6 for the first 20 minutes. Then, lower the temperature to 160C/325F/Gas Mark 3 for the next 30 minutes.
 

 
It is a very good pastry. The pork is so tender that eating with apple advances the taste.

Apple Crumble Pie



X’mas is 22 days left. Are you ready? Taiwan is not a Christ country so that we don’t really celebrate X’mas. Of course, most of us have no ideas what the story of X’Mas. Why do people celebrate X’Mas? Although this is my second X’mas, I really understand the meaning of X’Mas this year. It’s good. People can go travelling every time. But, it is difficult to understand their culture and festivals in their countries. I know why we should be encouraged to go and see the world. Because you will know and learn more during the adventure.

Oven Temperature Setting: 180C/350F/Gas Mark 4
Baking Time: 20~25 minutes
Recipe: A 7” Apple Crumble Pie

 


 

Steps of Apple Crumble Pie
(1) Prepare a sauce pan. Put sugar, chopped apple and blackberry in the pan. Switch the medium heat on. Cook around 5~10 minutes until it turns soft. Dry the filling. Set aside.

 


(2) Prepare crumble: Add Sugar and flour in a big bowl. Mix a little bit. Add cubed butter in the bowl. Use your finger tips to rub the butter into flour until it turns crumb-like.
 

 

(3) Get shortcrust pastry ready. Pour the apple filling over the top of the pastry. And then, cover the apple filling with crumble. Send into the pre-heat oven at 180C/350F/Gas Mark 4 around 20~25 minutes until it turns golden.
 

 

 
I like this kind of pie a lot. It is not really a cake. It is more fruit dessert. Sweet and sour flavor… um… yum… yum… This pie was eaten out by 4 people. We ate with custard and ice cream. So, enjoy it.

Egg Custard Tart with Blackberry Apple


Last Saturday, It snowed in the UK. It is really unusually. Before coming to here, I always thought that it is very normal to see snow when countries at higher latitude. But, I was wrong!! Having snow depends on what kind of geography it is. Although here is at high latitude, but there is a few high mountains. So, it is unusual to have snow. Maybe in January. Just maybe. But, this year, having snow in November let me expect to have white X’mas. Oh… I definitely look forward to it. Anyway, it is very cold here. So, please keep warm.

My friend’s friend gave us some apples last week. I don’t really like to eat apple, but it like to use it in my cooking and baking. Although I just backed egg custard last week, I still want to eat more. I got apple and I want to eat Egg Custard. So, why not bake Egg Custard Tart with some apple filling?

Oven Temperature Setting: 180C/350F/Gas Mark 4
Baking Time: Around 20~25 minutes
Recipe: A 7" Egg Custard with Blackberry Apple



 

 
Steps of Egg Custard Tart with Blackberry Apple
(1) Place chopped apple and blackberry in a saucepan. And 20 g sugar in the pan. Switch the small heat on. Cook the apple until it turns soft. Dry it and set aside.


(2) Place eggs and sugar in a sauce pan. Switch the small heat on. Stir it until sugar is melted into the egg.
(3) Add milk and cream into the pan. Switch to medium heat. Keep stirring it. Cook until there are some bubbles floating up to the top. Switch the heat off.


(4) Pour the batter through a sieve twice. This movement can smooth your batter.
(5) Place the blackberry apple filling over the top of pastry. And then, pour the batter over the top of filling. Send it to the pre-heat oven at 180C/350F/Gas Mark 4. Bake it around 20~25 minutes until it is set but still slightly wobbly in the middle.


 



I think I like this fruit egg custard more than egg custard. It has more flavor for the tart. If you eat pure egg custard too much, sometime, you will feel too much. But, adding with some fruit, it balances. Um.. it is YUM.. Enjoy it.

Apple Cake

This recipe of Apple Cake is the best one I ever baked. This is Mary Bery’s recipe. On her website, it is called “The Very Best Apple Dessert Cake.” And it is true. I have used this recipe to bake several times. And everyone always tells me to share this recipe. And so far, I still feel it is the best I ever have.

I still remember the first time my friend and I baked this one. When we took the cake out of the baking tin, there were some crumbs dropped to the table. We were planning to try the flavor, but it was too yum that we just used our hand to grab the cake and ate it directly. So, you can see how tasty it is. If you are a big fan of any type of apple dessert, you must try this one.

Oven Temperature Setting: 160C/325F/Gas Mark 3
Baking Time: 70 ~ 90 minutes
Recipe: A 7” round baking tray



 
Steps of Apple Cake

(1) Melt all butter. And set aside
(2) Peel, core, and slice the apple. When slicing the apple, if you put half of the apple in horizontal way and slice. You will find it out it is easier to slice it in similar size.


(3) Add egg, almond extract and melted butter in a bowl. Mix all ingredients well.
(4) Add flour, baking powder, sugar gradually into the bowl. Well-incorporate all of them.


(5) Pour half of the batter into the baking tray.
(6) Lay the sliced apple in the batter.
(Selena’s Kitchen Talk: It is not necessary to place like what I did.)
(7) Spoon the rest of dough into the slot between two sliced apples. It is very hard to do it. If some mixture is over the top of apple, it doesn’t matter. It will melt into the slot when baking it.


(8) Send it the cake into the pre-heat oven at 160C/325F/Gas Mark 3. It takes around 70~90 minutes.
 
Oh… It is so delicious. Again, the crust top is the best among the cake. Serving in hot is the best way to eat this apple cake. And eating with vanilla custard or ice cream just lets it better. I have baked it several times and I will keep baking this recipe.

Apple Strudel


I received a postcard from my friend who visited Austria. Printed on the postcard is not any famous city in Austria. It is printed the most famous Austria cakes. It is a really lovely postcard because she knows I love to do lots of different baking. If there is no one telling what the most famous cake is in Austria, I will never know it. I think it is called friendship. I know she will always support me even though we stay at different countries. I know we might not have any opportunities see each other often like what we usually did. But, a hello and a postcard are represented the love between you.
Totally, there are 6 cakes on that postcard. For her, I’ll do my best to study all of them and blog all of them.

Oven Temperature Setting: 200C/400F/Gas Mark 6
Baking Time: 20~25 minutes
Recipe: Serve 5~6 people

 
 
Steps of Apple Strudel

(1) Juice and zest the lemon. And then, soak raisins into the juiced. Set aside.


(2) Prepare a saucepan. Place chopped apple into the saucepan. Cook apple with sugar and 40 g butter by small heat until it turns soft. It takes around 10~15 minutes. If there is any juice left, dry the apple. 


(3) Switch the heat. Add lemon juice, raisins, nutmeg, and breadcrumbs into the apple. Well-incorporated all ingredients. Cool down around 10~15 minutes.


(4) Melt another 40 g butter. Brush melting butter over the top of one sheet of Filo pastry.
(5) Cover another one and repeat step (4) and (5) until using out all Filo pastry.
(6) Place Apple mixture over the top of Filo Pastry



 
(7) Roll it up. Brush the rest of melting butter over the top.
(8) Slash over the top. Send it into the pre-heat oven at 200C/400F/Gas Mark 6. Bake Apple Strudel until the surface turns golden and crispy. It takes around 20~25 minutes.
 
                     

I can understand why Apple Strudel can be so popular in Austria. It has a very crispy pastry and with a very soft apple mixture inside. A little nutmeg flavor. Everything is so balanced. Some people just eat purely, some people eat it with custard sauce. For me, I eat with caramel ice cream. I like that hot-and-cold feeling. Just Enjoy it.

Apple Crumble Cake


Apple crumble cake is a very common cake in the UK. Almost everyone knows how to do this kind of cake. And even, you can buy it at every shop, even at shops. Moreover, my friend told to me that she will eat it when she feels happy. Or, she will have it when she feel sad. It is like “a good food friend” companying whenever you need it. When I said to my friend I would like to bake some traditional British cake, she said I had to learn Apple Crumble Cake.

 

For me, I like to eat juicy fruits so that Apple, of course, is not the one I like it. But, the amazing thing is that Apple is a very good fruit when baking a cake. When I purchase some apple every time, my friends will know I am going to do some apple cake.

 
This recipe is for one 8” and one 6” round tin


Selena’s Kitchen Talks: I will prepare Apple Filling, Crumble Toppings, and then cake. It is because apple filling takes time to be cooled.

Oven Setting and Time: 165 degree C, around 30~35 minutes

 Step for Apple Fillings

(1) Chop Apple into an appropriate size. Like 1.5 cm x 1cm
Selena’s Kitchen Talks: It is all dependent on personal preference. Of course, it cannot too big to put a whole apple.
(2) Weight sugar and lemon juice. And then, put chopped apple and other ingredients into a pan.
(3) Simmer it until tender and slightly transparent. It may need to stir to make sure every piece of apple is cooked
Selena’s Kitchen Talks: Again. It is all dependent on personal preference and what kinds of apple used. Cooking apple takes around 5 minutes. Others will take around 10 minutes.
 

Step for Crumble Topping

(1) Weight all ingredients. Pour sugar and flour into a bowl and put butter on the top
(2) Rub butter into flour. Do not overwork that it will become heavy. It should be light. Then, put it into fridge when assembling it.
Step for Cake

(1) Put all wet ingredients (egg and milk) into a big bowls. And mix it well. (around 1 minute)
(2) Add butter into the batter and mix again. It takes around 1 ~ 2 minutes.

(3) Pour flour, sugar, and baking powder into batter several time and well-mixed it.
(4) Before pouring out to the baking tin, use a spatula spoon to make sure every ingredient is well-mixed.


 

Assemble the cake

(1) Pour batter into tin with either baking paper or greased on the surface
(2) Pour cooked apple on the top cake batter
(3) Sprinkle crumbles on the top and cover the apple


(4) Send it into oven and wait around 30~35 minutes. Insert a cake tester into the cake. If there is no batter left, it means cake is ready.
Selena's Kitcen Talk: I always switch the oven off, open the oven's door and leave their for 10 minutes. This cooling process can prevent the cake from sinking. Then, move it out of tin.
 

Some people like to eat it in Hot with some custard source. Or, it is blackberry season. Why not add some blackberry source on the top. Moreover, add one spoon of ice cream on the top of it and drink with a cup of tea or coffee. Enjoy it.
