Lemon Curd Soufflé


What is your feeling about Soufflé? Very soft? Yes. And Just melt in your mouth? Yes. Of course. It is how people like it or love it! I knew what Soufflé is from the movie called, “Because I said so.” In this movie, Milly likes baking and she loves to bake Soufflé. Even more she thinks her Soufflé burnt represents a bad sign of her love. From that moment, I have no idea, but I feel like Soufflé is seen as the symbol of love. Am I silly? Haha… Maybe…

Oven Temperature Setting: 180C/350F/Gas Mark 4
Baking Time: Around 15 minutes
Recipe: 2 2.5 inch cups, around 5 cm height




 
Steps of Lemon Curd Soufflé

(1) Separate egg white and egg yolk into two different bowls. Whisk egg white until it is stiff.


(2) Place egg yolk and lemon zest and lemon juice into a bowl. Mix them well.
(3) Add 15 ml milk into the mixture. Well-mixed them.


(4) Add flour, cornstarch, and sugar into the mixture. Incorporate tem well.
(5) Fold 1/3 of egg white into the mixture. Then, fold in more egg white slow and lightly.


(6) Firstly, place 1 table spoon of lemon curd into each cup. Then, pour the mixture into the cup. Send it to the pre-heated oven at 180C/350F/Gas Mark 4. Bake it around 15 minutes until the top of Soufflé turns golden.



This double lemon flavor Soufflé is soooooo YUM. The Soufflé is covered with lemon curd that the extreme sweet-sour flavor is your mouth. Oh…you will find out you want more. Be carefully, it is very HOT, but you cannot resist to have another bite. Enjoy it.

Lemon Tiramisu


I like Tiramisu, or I should say I like mascarpone cheese filling. Mascarpone cheese is very rich and creamy. I like the taste in my mouth. I still remembered when I started to learn how to bake or make a cake. Tiramisu was on the top of my list. Then, I found out it is not hard at all. Lady finger is harder than preparing the Mascarpone Cheese filling. I don't find out how to bake a very good lady finger yet so that... please excuse me there is no link of lady finger this time.

Back to Lemon Tiramisu, I designed this one because of my friend who don’t like to eat chocolate by-product, but like Mascarpone Cheese. I think we still get plenty lemon so that why not to make a Lemon Tiramisu.

Recipe: A 15 x 20 cm dish



Steps of Mascarpone Cheese Filling

(1) Whisk egg white. Add 1/4 tea spoon of lemon juice in when egg white starts to have some bubbles on the top. Egg white should be beaten until it is light and stiff enough. Then, set aside.
(Selena’s Kitchen Talk: The bowl with egg white needs to be clean and dried totally.  Otherwise, the egg white can’t be whisked to light and stiff.)


 
(2) Add egg yolks and Mascarpone Cheese and vanilla extract into a big bowl. Mix them well.

(3) Add sugar into the cheese mixture. Well-incorporated all ingredients
(4) Fold-in egg white into the cheese butter gradually and lightly.


 
Steps of Assembly

(1) Add 2 Table Spoon Water into the rest of lemon juice
(2) Brush lemon juice over the top of lady finger. And Then, layer this lady finger into the dish until it covers the bottom


(3) Pour some Mascarpone Cheese mixture over the top.
(4) Repeat step (2) and (3) twice so that we can have 3 layers.
(5) Pour a layer of lemon curd over the top of Mascarpone Cheese filling. Leave in the fridge over night. Cut it before serving it.


 
I was worrying about the flavor of lemon curd will be too strong so that we cannot enjoy the flavor of mascarpone cheese. The flavor of this lemon tiramisy is perfect. It is a very fresh and beautiful lemon flavor in your mouth. Lemon is very good ingredients for mascarpone cheese that I will definitely do this again. But, I will double the amount of mascarpone cheese next time. Enjoy it.!!

Lemon Curd

I never know what Lemon Curd is until I am here, in the UK. Though Lemon Curd may be not so popular like other jams in the world, it is a very useful sauce for lots of desserts. For example, like lemon tart, Lemon-meringue pie. Or, some people just spread lemon curd over bread, scones, waffles. Unlike custard, cooking lemon curd does not use milk so that the taste is smoother. Some people use lemon curd as an alternative to jam at afternoon tea because of it fresh and light. So, try it, if you didn’t have this before.

Recipe: Around 200 ml
 

 
Steps of Lemon Curd
(1) Slice butter into the cubes. Place it in a big bowl. Put the bowl on the top of the boiling water. Please don’t let the bottom of the bowl touching the boiling water.
(2) Add sugar in. Stir butter and sugar until they are melted.
(3) Add lemon juice and zest into.

(4) Add eggs the bowl. Keep stirring it around 10~15 minutes until it turns thicken.
(Selena’s Kitchen Talk: If you think it is hot in the bowl now, please don’t put egg in. Leave the bowl out from the boiling water for a while. We don’t want to boil egg.)
(5) Then, leave at room temperature to cool down. Stir occasionally when cooling down.
