Chocolate Banana Mousse Tart


This tart was prepared for a craft night. The purpose of the craft night is to prepare some X’mas gifts for children in Romania. My friend had a speech to let people what their team did in Romania this year. They go to Romania every year to help children over there. We did some hair accessories, candy cane and sock toys that all of them will be delivered to Romania in November. It is a meaningful event that we just did some simple toys that can make those children have a happier X’mas.

Recipe: A 7” Chocolate Banana Mousse Tart
 
 
                           

 
Steps of Chocolate Banana Mousse Tart

(1) Add gelatin powder into cold water. Set aside for around 5 minutes until gelatin powder absorbs the water. Then, place the cup into a pan with boiling water. Stir it until it is dissolved. Then, cool down a little bit.


(2) Add 2 chopped banana, egg yolk, half of sugar, and 20 ml double cream into a big bowl. Stir all ingredients until they are well-incorporated.
(3) Place the bowl over the top of saucepan. Heat a little bit. Then, add the dissolved gelatin into the bowl. Set aside.

(4) Add 130ml cream and half of sugar into another bowl. Whip the cream until it is light.
(5) Fold the whippeded cream into the batter gradually. Make sure it well-mixed before adding more whipped cream into the batter.


(6) Chop another banana, and then place them over the top of the pastry. Pour the batter into the chocolate pastry. Leave in the fridge overnight.


(7) Prepare chocolate ganache icing: Place the bowl over the top of saucepan, but don’t touch the water. Add 60 ml into the bowl and warm it up, and put broken chocolate into the bowl. Mix it until it is melted. Cool down a little and then pour over the top of mouse. Use a knife to spread it. Set aside in the fridge for another hour.


 
My chocolate banana mousse tart was the only dessert gone at the craft night. I was so happy some people coming and asking how I did it. Because they said they didn’t see this kind of tart before. And yes, after staying here a year, I found out English people prefer to eat cake. But, in Taiwan, we like to eat mousse or lighter cake.

Anyway, this chocolate banana mousse tart is very rich. It will be good to eat with a cup of tea or coffee. Enjoy it.

Salted Caramel Banana Swiss Roll

Swiss roll is not hard to make, but it is not so easy. I have baked twice before this one. The first one was thrown away directly. Second one was better. But, the shape was not good. The cake of swiss roll is the easy part as long as you know how to measure and how to mix. The difficult part is how to roll it up. So, it is my third time challenge. And… YEAH… I made it. Finally, it works. This success really encourages me to working on some new things. Some difficult things. I love baking. I love to see people’s big smile after they eat the cake. Baking Temperature Setting: 200C/400F/Gas Mark 6
Baking Time: 12~15 minutes
Recipe: 1 Salted Caramel Banana Swiss Roll, Around 50 cm



Steps of Salted Caramel Banana Swiss Roll

(1) Separate egg white and egg yolks into different bowls. Whisk egg white. Add lemon juice when egg white starts to have some bubbles on the top. Egg white should be beaten until it is light and stiff enough. Then, set aside.
(Selena’s Kitchen Talk: The bowl with egg white needs to be clean and dried totally.  Otherwise, the egg white can’t be whisked to light and stiff.)


(2) Add butter and sugar in a bowl. Whisk them until the butter turns to light and fluffy
(3) Add egg yolks into the butter mixture. Well-mixed all of them.

(4) Add milk and vanilla extract into the bowl. Well-incorporated all ingredients.
(5) Add flour into the batter gradually. Mix everything well before next mix.
(6) Fold in stiff egg white into the cake mixture gradually and lightly.
(7) Pour the mixture into the baking tray with baking paper. Use a spatula to make sure the cake mixture is even. Then, send it into the pre-heat oven at 200C/400F/Gas Mark 6 around 12~15 minutes.


 
Steps of Assembly
(1) When cake is ready, leave it at room temperature around 5 minutes to cool down.
(2) Put another rack on the top of cake. It is easier to help me turn the cake over.
(3) Then, remove the baking paper from the cake. Then, turn it back.


(4) Slice three or four at the side (not down to the bottom) you would start to roll it up.
(5) Roll it up and set aside around 20~30 minutes to cool it down.


(6) Unroll the cake. Spread salted caramel custard over the top.
(7) Slice the banana into small pieces and spread even over the top.
(8) Roll it up again. Leave in the fridge. Cut it before serving it.


 
I was so happy when I finished the assembly. This swiss roll is bigger than I did before. And it rolls up good. It has proved that everything will work if believing yourself and keeping practicing. So, enjoy my Salted Caramel Banana Swiss Roll.

Banana Cake with Cheese Cake Filling


 
I saw IKEA’s “#joyofthekitchen” advertisement. They show a banana loaf with cream cheese. It looks so tempting. So, yes. Why not?! I love banana cake. And my favorite cake is cheese cake. I did Brownie cheese cake. It is so YUM! I think that banana cake with cheese cake filling should be very delicious. So, let’s do it.

 
 
 
 
 
 
 
 
 
 
Oven Setting and Time: 180 degree C, around 50~60 minutes

This recipe is for one 8” tin

Steps of Banana Cake

(1) Weight all ingredients
(2) Well blended butter and sugar together until it is a fluffy light yellow mix
(3) Add eggs into the daughter and mix it again.

 

(4) Chopped 1 and half bananas into small pieces. Mix it with daughter around 30 seconds.
(5) Pour flour and baking powder into the batter. And mix it well.
(6) Use a spatula spoon to make sure every ingredient is well-mixed.


Steps of Cheese Cake Filling

(1) Weight all ingredients
(2) Well blended soft cheese and egg together
(3) Pour sugar and flour into batter. Well-mixed it. Set aside
 
Steps of Assembly

(1) Pour 2/3 cake batter into a 8” tin with either baking paper or greased surface.
(2) Pour all filling on the top of cake batter.
(3) Pour the rest of cake batter on the top of cheese cake filling


(4) Pre-heat the oven at 180 degree C around 10 minutes. Send the cake into oven. Wait around 50~60 minutes.




 

This is a good cake. But, cheesecake flavor is not so strong. I like brownie with cheesecake filling more than this one. Share it next time. If you are a cheese cake fan, you can try it. Maybe, you will love it. Enjoy it.
