Chinese Multilayer Bread


 
I like flour based food, no matter how it is cooked. Chinese multilayer bread is traditional bread. It is quite difficult to purchase this now. I remembered this kind of bread has a crispy surface with a tender inside. After looking for lots of recipes, I understand why it is hard to purchase now. A yum Chinese multilayer bread needs an overnight preparation. And it also needs to fold the dough again and again. (quite like preparing puff pastry) But, delicious food should be cooked and shared, shouldn’t it :D 

 
Recipe: A 8” Multilayer Bread
 



Steps of Overnight Preparation

(1) Weight all ingredients
(2) Place flour and instant yeast into a bowl. Mix it well

(3) Add water into the flour mixture. Incorporate all ingredients well until there is no flour left. Knead it into a ball. Cover it with a lid or cling film. Put in the fridge at least 8 hours.

 
Steps of Chinese Multilayer Bread

(1) Weight all ingredients
(2) Place flour, sugar, and 3 g salt into a bowl. Mix it well. Then, add instant yeast into the bowl. Mix it again.

(3) Add water and overnight preparation dough into the flour mixture. Mix it well.
(4) Knead butter into the dough and shape it into a ball. Set aside. Wait it until it double the size. It takes around 1~2 hours
(Selena’s Kitchen Talk: This kind of bread doesn’t need to knead it until soft.)

(5) Chop spring onions into small pieces, around 0.2mm. Add the remaining 2 g salt into spring onions. Mix it well.
(6) When double is ready, move the dough into a slight flour surface. Squeeze the air out.
(7) Roll it into a rectangular shape, around 30cm by 40 cm. Then, brush a little sunflower oil on the surface.
(Selena’s Kitchen Talk: Make sure brushed oil covered on the surface of the dough.)

(8) Drizzle the half of spring onions on the surface. Fold one third into the middle. Brush sunflower oil on the folded surface. Then, fold another on third into the middle.
 
(9) Roll it horizontally, around 50 cm length. Brush some flower oil.
(10) Drizzle the rest of spring onion over the top. Fold one third into the middle

(11) Brush sunflower oil on the folded surface. Fold another one third into the middle.
(12) Drizzle a little white sesame seeds over the top. Roll the dough into the round shape.

(13) Brush some sunflower oil on the top of the fried pan. Switch the small heat on. Put the dough into the pan. Cover with a lid or a plate. Fried it around 9 minutes.
(Selena’s Kitchen Talk: The side with white sesame seeds should be faced up now.)

(14) Then, brush some sunflower oil on the top. Then Turn over. Cover with a lid or a plate. Fried it another 9 minutes.
(15) Move it on the baking cooling rack.

 
It is the taste in my memory, although I over-cooked one side. But, it is very taste. It is very simple to do WITH lots of steps. If you like flour based food and want to try some new things, try this one. You w
